This is Downtown: Biggs Ribs

Biggs Ribs has officially landed in the core. What started as a small home experiment during lockdown has grown into a full-on success story, and now, a location at 56 James Street North.

Owner Elias began teaching himself how to make beef ribs after a great meal gave him the idea to try it on his own. He had never cooked a rack before, but after some Googling, testing, and encouragement from friends, Biggs Ribs was born. His pop-ups in Brampton and Toronto sold out fast and built up a loyal following.

The new Hamilton location is welcoming, with a clean black-and-white interior, polished tile floors, and a growing wall of handwritten messages from fans and supporters. The mural inside, painted around the order window, adds a splash of personality and gives the space a vibrant touch.

We stopped in during Supercrawl weekend to try the Supercrawl Sampler, which was created specially to kick things off. It came loaded with two beef back ribs, four short ribs, a half pound of wings, slaw, fries, and a drink. You can choose your sauce and type of fries, we went with waffle fries, as recommended by the staff.

Everything was cooked to perfection. The short ribs were tender and full of flavour, the wings had just the right amount of crisp, and the back ribs fell clean off the bone. You can tell the food is made with real care. This is clearly a business built on passion, not shortcuts.

Biggs Ribs is the kind of spot that makes you want to come back, bring a friend, or just sit down and dig in. It’s another great addition to the Downtown Hamilton BIA, and we’re happy to have them here in the core.
